These start-ups are attacking ultra-processed products

In other words, no steak or vegetable sausages, but “cakes” and “nuggets” to eat alongside his green beans or mashed potatoes. All based on an unknown food: jackfruit, which grows mainly in the southern hemisphere and can weigh up to 40 kg.

Here, the objective is not to reproduce the taste of meat, but to fight against ultra-processed products. “Fruit pulp, breadcrumbs, olives…no ingredient is ultra-processed”, insists the entrepreneur. On Nova, the benchmark index on the subject, the start-up receives a 3 (processed product), versus a 4 (ultra-processed product) for most meat imitations.
